Rice flour is a powder made by finely or relatively coarsely grinding rice, used to add the rice-specific mild flavor and soft viscosity to dough and broth. Glutinous rice flour yields a lighter, cleaner set, and sticky rice flour yields more chewy results, so it is important to check the type before cooking. It can be used widely for making 떡 (rice cakes), porridge, jeon ( Korean pancakes), noodle dough, frying batter, and adjusting the thickness of sauces. Even with the same rice flour, water absorption varies depending on particle size and whether it is dry-ground or wet-ground. If the dough becomes stiff quickly or the surface roughens, the flour is absorbing moisture, so add water in portions rather than all at once. Unlike breads that require gluten structure to rise large and be elastic, rice flour alone makes it difficult to achieve the same result. On the other hand, for crispy, lightweight textures or smooth hardening, rice flour has advantages over wheat flour in cooking.
Geschmack und Textur
The flavor is generally mild with a subtle rice aroma and does not overpower strong seasonings or the taste of broth. Finer particles give a smoother finished product, while rough flours can leave some graininess and a slightly coarser chew. When mixed with water and heated, starch expands, creating thickness and binding. Glutinous rice flour tends to harden firmly and blandly, while non-glutinous varieties feel firmer and more elastic in flavor; thus, substituting them one-to-one yields noticeable differences.
Hauptverwendungszweck
- Use as a base for rice cake dough, and distinguish between glutinous rice flour and regular rice flour depending on the desired texture of the rice cake. If the surface cracks during steaming, the dough may lack moisture, so in subsequent cooking increase water slightly or mix the dough more evenly.
- A small amount can be stirred into porridge or soup to thicken it. If you add flour directly to boiling liquid, lumps tend to form, so it is smoother to first disperse it in cold water or broth.
- Use in pancake or savory pancake batter to achieve a lighter crispiness different from wheat flour. However, if the rice flour content is too high, the dough’s binding may be weak and break when turning, so adjust with eggs, starch, or other powders.
- Enhancing with a bit more will help create a thin, fresh surface in frying. If left too long, it absorbs moisture and the crispiness can lessen, so fry as soon as possible after cooking.
Vorbereitungstipps
- Sift before use to break up stiff lumps so dough and slurry mix evenly. Particularly moist flour tends to lump, so sift and then add water gradually.
- For dough, don’t pour all the specified water at once; leave some water aside. Use a ball-formed, not too wet or too stiff standard. Tteok steaming dough and pourable batter may require different moisture levels.
- When adding to broth, first mix rice flour with cold water or cold stock to make a slurry. If the slurry sinks to the bottom, stir again before adding to avoid one area becoming overly thick.
- Dry rice flour and soaked rice ground into wet flour may have different moisture levels. Check packaging and dough state and adjust water; do not apply one measurement for both types.
Besonderheiten beim Kochen
- Rice flour thickens as starch absorbs moisture when heated. The sauce may look thin at first but can thicken quickly during boiling, so reduce heat and stir when the desired thickness is just shy of reached.
- Aggressive boiling and constant stirring can help make a thickened mixture more uniform. However, over-kneading or overheating already thick dough can make it too sticky or hard; for tteok dough, avoid excessive manipulation once the desired texture is achieved.
- Pancake batter should be cooked until the surface dries and edges set before flipping. If flipping too early causes cracking, raise heat only moderately and extend the time for one side to set.
- In frying, moisture escapes and the surface becomes firm and crispy. If the oil temperature is low, the batter absorbs fat; do not crowd the pan and fry in batches after the oil recovers temperature.
Gut passende Kombinationen
- Its mild taste pairs well with aromatic seasonings and umami-rich sauces like sesame oil, soy sauce, miso, and gochujang. Even with strong seasonings, ensure the rice flour dough’s moisture is balanced to reduce any blandness.
- Pair with beans, red beans, nuts, sesame to create a contrasting texture with a savory flavor. If there are many large toppings or fillings, the delicate rice flour dough may crack, so adjust size and amount.
- For pancakes containing seafood or vegetables, the light texture of rice flour can be appealing. When adding ingredients with high moisture, the dough may become thin, so wipe moisture from ingredients or adjust the dough thickness slightly thicker.
Hinweise zum Ersetzen
- If you fully substitute glutinous rice flour with sticky rice flour, results tend to be much stickier and more elastic. If the goal is not chewiness but for porridge thickness, a direct substitute with glutinous rice flour alone may not be suitable.
- Wheat flour can replace some of the rice flour in pancakes or frying batters, but gluten can make it more elastic and heavier. If crispness is the goal, consider mixing some starch instead of using only wheat flour.
- Cornstarch or potato starch can substitute for thickening sauces, but clarity, viscosity, and texture when cooled will differ. Start with small amounts depending on whether the sauce is for immediate consumption or to set as a chilled dish.
- For preparations where rice flour is the main ingredient like tteok, one-to-one substitution with other flours is often not suitable. The required flour and water ratios vary depending on whether the goal is chewy or tenderly crumbly.
