Yaourt tự nhiên

Plain yogurt is made by fermenting milk, and typically has little added sweetness or aroma. It has a refreshing tang and smooth texture, and is widely used from sauces and dressings to doughs, marinades, and desserts. Because moisture content, fat, and whey separation vary by product, the same amount can yield different final thickness. When used cold, it adds creaminess and acidity; when heated, it adds moisture and rounds the flavor. However, with prolonged heating at high heat or with acidic ingredients, proteins can coagulate and separate, so for a smooth sauce it is best to add it at the end of cooking or lower the heat. Conversely, a slightly chunky texture can be natural in curries or stews, in which case this change may not be a problem.
Hương vị và kết cấu
The taste is clean and subtly tangy, with varying dairy notes and nuttiness depending on the product. Even unsweetened versions have a natural acidity from fermentation, which helps cut richness in savory dishes and highlight sweetness. Regular plain yogurt is soft and scoopable, but products with whey separated can feel thinner. For dips or creams requiring a thick texture, a thick yogurt is preferable, while a thinner product can act like water or milk, increasing the moisture of doughs and sauces.
Cách sử dụng chính
- Mix with cucumber, herbs, garlic, and salt to use as a cold dip or side sauce. If you add high-moisture vegetables directly, it will thin over time, so for a thicker sauce, pat dry the vegetables first.
- Add to curries, stews, and soups to boost acidity and a soft texture. When boiling, add all at once can cause separation, so lower the heat and add gradually, mixing.
- Use in marinades for chicken, lamb, etc. to help spices adhere and add a soft texture on the surface. If soaked too long, the surface can feel too soft, so this is not ideal for thinly sliced ingredients or delicate fish.
- Add to cake, muffin, and pancake batters to introduce moisture and a gentle tang. If you replace part of the liquid in the batter, you should reduce other liquids a little to avoid making it too runny.
Mẹo chế biến
- If the whey is floating on top before use, mix it in to uniform thickness, or strain only if you want a thicker result. If you mix in the whey, flavor remains but with more liquid in sauces and doughs.
- When adding to hot broth or sauce, whisk in a little warm liquid first to raise the temperature, then add to the pot. This helps reduce grainy separation from sudden temperature changes.
- When making cold sauces, don’t add salt and acidity all at once; mix and let rest briefly before tasting. Salt can draw moisture from vegetables, so if sauces with cucumber or tomato become thin, adjust the vegetable’s moisture rather than adding yogurt.
- When baking, let the yogurt sit a moment to mix well with other ingredients rather than adding cold yogurt directly. For doughs that need butter to stay firm, too-long room-temperature yogurt can raise the dough temperature.
Đặc điểm khi nấu ăn
- Plain yogurt adds a gentle texture and acidity to sauces at low heat, but simmering on high heat for too long can cause proteins to coagulate and separate into whey and curds. If bubbles form on the surface, reduce to low heat or remove from heat and stir.
- Fats and a thicker product are less likely to separate during heating, but no product is completely stable under vigorous boiling. For cream sauces requiring a smooth finish, it’s safer to use yogurt toward the end rather than simmering it for a long time as the main ingredient.
- In batters, the acidity of yogurt can interact with baking soda to affect texture. If a recipe includes baking soda, the yogurt’s acidity can be meaningful, so when substituting with milk, results may be less fluffy or taste different.
- Refrigerated yogurt can become thinner when stirred. If a dip is initially runny, continuing to stir to restore thickness is difficult, so add extra liquid in small amounts.
Sự kết hợp phù hợp
- Fragrant herbs like garlic, dill, mint, and parsley brighten the yogurt’s acidity and pair well with cold sauces.
- Pairs with milder or starchy ingredients like cucumber, grilled eggplant, potatoes, and chickpeas to reduce the yogurt’s heaviness.
- Warm spices like cumin, coriander seeds, paprika, and pepper balance yogurt’s subdued acidity. In very strongly flavored dishes, start with a small amount of yogurt to ensure the acidity doesn’t overpower the aroma.
- Honey, fruit, and nuts make simple desserts or breakfast bowls. If fruit is very tart, taste the yogurt’s acidity first before adding sweetness.
Điểm cần lưu ý khi thay thế
- For cold dips or dressings, sour cream can be used, but sour cream tends to be richer and may alter the acidity. When replacing with a thinner plain yogurt, adjust thickness with a small amount of water or milk.
- In heated curries or sauces, fermentation dairy like crème fraîche can feel more stable but flavor will be richer and less light. If the goal is a bright yogurt flavor, it’s not a perfect substitute.
- In baking, buttermilk can provide similar acidity and moisture but may be much thinner. When substituting yogurt with buttermilk, consider reducing other liquids in the recipe or adjusting dough consistency.
- If dairy is to be avoided, plant-based unsweetened yogurt can be considered, but protein and fat composition differ, affecting thickness and separation when heated. It is relatively easy to use in cold sauces, but for hot sauces or baking where coagulation stability is important, small test is more suitable.
