rice flour is ground from rice finely or relatively coarsely, used to add the characteristic mild flavor and soft texture to dough and broth. glutinous rice flour is relatively light and sets cleanly, while glutinous rice flour yields more chewy results, so check the type before cooking. Useful in a variety of ways: for dduk, porridge, jeon, noodle dough, batter fry, and adjusting thickness of sauces. Even with the same rice flour, particle size and whether dried or wet affects how quickly it absorbs water. If the dough becomes firm quickly or the surface is rough, the flour may be absorbing moisture, so add water in portions rather than all at once. Bread-like dough that needs gluten structure to rise and be elastic is hard to achieve with rice flour alone. Conversely, for crispy or lightly crumbling textures, or smoothly setting texture, rice flour has advantages other than wheat flour.

الطعم والملمس

The flavor is generally mild with a subtle rice aroma, and it does not overpower strong seasonings or the taste of broths. Finer grains yield smoother finished products, while coarser flours leave a grainy bite. When wet and heated, starch expands to thicken and bind. Glutinous rice flour tends to set firmly and blandly, while glutinous rice flour tends to feel more elastic and chewy, making it difficult to substitute one for the other in the same way.

طرق الاستخدام الرئيسية
  • Used as the main ingredient for tteok dough, and the texture of the tteok dictates whether to use glutinous rice flour or glutinous rice flour. If the surface cracks during steaming, the dough may have lacked moisture, so in the next preparation increase water slightly or mix the dough more evenly.
  • You can thinly disperse in soups or porridges to add thickness. If you put the flour directly into boiling liquid, lumps can form, so it's smoother to first dissolve in cold water or stock.
  • For pancake or fritter batter, helps to achieve a lighter crispiness different from wheat flour. However, if the rice flour content is too high, the dough may lack cohesion and break when turning, so adjust with eggs, starch, or other flours.
  • Adding to frying batter helps create a thin and fresh surface. If kept for long, it will absorb moisture and lose crispness, so fry as soon as possible after preparation.
نصائح التحضير
  • Before use, sift once to loosen the stiff clumps so the dough and slurry mix evenly. In particular, moist flour tends to clump, so after sifting gradually add water.
  • If making dough, don't pour all the water at once; leave some aside. Aim for a dough that holds together when squeezed but is not overly wet, keeping different moisture needs for steamed tteok and thin batter.
  • When adding to broth, first mix rice flour with cold water or cold stock to make a slurry. If the slurry sinks to the bottom, stir again before adding to prevent one part from becoming too thick.
  • Powdered dry rice flour and soaked-rice ground to make wet flour can have different moisture levels. Check package instructions or dough state and adjust water, and avoid applying one type of measurement to another.
خصائص عند الطهي
  • Rice flour thickens as starch absorbs moisture when heated. The sauce may seem thin at first but can thicken rapidly during boiling, so lower heat and stir when the mixture is slightly thinner than desired.
  • Constant vigorous boiling and stirring can help make a slurry more uniform for thickened rice flour mixtures. However, over-kneading or overheating already thick dough can make it too sticky or firm, so avoid excessive manipulation after achieving target texture for tteok dough.
  • Fried batter should be cooked until the surface is dry and edges set before flipping. If flipping too early, instead of cranking up the heat, extend the time on medium-low heat to firm up the structure of one side.
  • In frying, water escapes and surfaces becomes hard and crispy. If the oil temperature is low and the coating soaks up oil, fry in small batches and wait for the oil to recover before adding more.
تركيبات مناسبة
  • Because it is mild, goes well with fragrant seasonings and umami-rich sauces like sesame oil, soy sauce, miso, gochujang. Even with strong seasonings, adjusting the moisture of the rice flour dough helps reduce vegetable or grainy finish.
  • Pair with beans, red beans, nuts, sesame to create contrasting textures and flavors. If there are many large toppings or fillings, the soft rice dough may crack, so adjust size and amount.
  • In pancakes with seafood or vegetables, the light texture of rice flour can be suitable. If using very moist ingredients, the dough may become runny, so pat ingredients dry or adjust dough thickness slightly.
نقاط يجب مراعاتها عند الاستبدال
  • If you need glutinous rice flour as a substitute, substituting with glutinous rice flour entirely tends to yield much stickier and more elastic results. For nonglutinous purpose like fillings or thickening, exclusive substitution with glutinous rice flour may not be suitable.
  • Wheat flour can substitute part of rice flour in pancakes or frying batter, but gluten may make it more elastic and heavy. If wanting crispiness, consider mixing in some starch rather than using only flour.
  • Cornstarch or potato starch can substitute for thickening sauces, but clarity, viscosity, and texture when cooled differ. Start with small amounts depending on whether the sauce is served hot or cooled to set.
  • In rice flour-based dishes like tteok, one-to-one substitutions with other flours are often not appropriate. Depending on whether the goal is chewy or soft crumble, required flour and water ratios vary.
