Zucchini is a vegetable eaten soft when not fully ripe, thinly sliced and stir-fried or added to soups and stews. It contains relatively high moisture and cooks quickly, yielding a mild flavor and naturally absorbing the flavors and aromas of other ingredients. In stir-frying, a quick cook to preserve shape and a fresh texture works well, while in jeon or stews you can utilize its softer texture. However, if heated for too long, it releases a lot of water and can become mushy, so adjust the slicing thickness and timing of addition according to the final dish texture.

Geschmack und Textur

The flavor is subtly sweet and savory, and it gently bridges bold spices or fermented seasonings like doenjang or gochujang. Raw, it is firm and moist; when cooked, the flesh becomes tender. The seeds are generally edible, but large seeds or very watery flesh can break apart easily during cooking. Choose firm, smooth-surfaced pieces to help keep their shape in stir-fries or pancakes.

Hauptverwendungszweck
  • For zucchini stir-fry, use half-moon shaped or julienned zucchini quickly sautéed with garlic, oil, salt or saeujeot (salted shrimp). When moisture starts to accumulate in the pan, raise the heat to finish quickly, or briefly evaporate moisture before adding the next ingredient to reduce sogginess.
  • In doenjang jjigae, gochujang jjigae, and clear soups, cut relatively thickly and add in the final cooking stage. If added too early, the broth will become soft, but zucchini pieces can break apart, so it is better to add toward the end in stews that require shape.
  • For pancakes or jeon, slice thinly or julienne and mix with egg batter. If the batter becomes too runny due to high moisture, rather than just adding more flour, lightly pat the zucchini dry and let the batter rest a moment to check thickness.
  • In bibimbap, donburi, and kimbap fillings, sauté briefly with a little salt, cool, then add. If added hot, moisture may bleed into the rice and make it soggy.
Vorbereitungstipps
  • Rinse under running water, trim the ends, and cut to the desired size. For stir-fry, 0.5 cm half-moon slices balance cooking speed and texture; for stews, cut slightly thicker to resist breaking.
  • If the cut surface has overly large seeds or the flesh looks spongy, it's better for soups than stir-fry. If using for stir-fry, remove part of the central seed-heavy portion and cook briefly to reduce sogginess.
  • If you salt too early, moisture can be drawn out and less water will be released during cooking, but the finished dish may be overly salty and the texture too soft. For dishes where crispness matters (like pancakes), minimize salting and season just before cooking.
  • Sliced zucchini can release moisture if left to sit after slicing; if moisture is noticeable, pat gently with a paper towel and fry in small batches over high heat to keep the pan temperature up.
Besonderheiten beim Kochen
  • When heated, zucchini cells soften quickly and release moisture, so if the pan is very crowded for stir-frying you may end up with a boiled texture. Using a wide pan or cooking in batches helps achieve a light sauté aroma on the surface.
  • When mixed with oil, the surface becomes smooth and seasonings cling, but over-stir-frying can cause the edges to become translucent and mush easily. Turn off the heat when you want to keep some texture, and finish with residual heat.
  • In soups and stews, it softens as it absorbs the broth’s saltiness and umami. If you don’t want the broth to become cloudy or the zucchini to disintegrate, add toward the end rather than during a vigorous boil.
  • In pancakes, thinner slices cook faster, but moisture can delay surface browning. If the pan isn’t preheated enough or batter is thick, instead of cranking the heat, medium heat to evaporate moisture from one side before flipping to prevent burning.
Gut passende Kombinationen
  • Using with aromatics like garlic, scallions, onions brings out zucchini’s mildness, while salty seasonings like saeujeot or doenjang enhance its subtle sweetness. If the aroma of saeujeot or salted fish is too strong for the dish, adjust seasoning with salt and soy sauce for a simpler balance.
  • Pairs well with eggs, tofu, mushrooms, and potatoes for gentle stews or stir-fries. Avoid overloading the pan with too many moisture-heavy ingredients at once, so mushrooms and onions should be sautéed first to reduce moisture before adding zucchini.
  • Chili powder, gochujang, and perilla oil add depth to zucchini’s delicate flavor. For a light, clear broth, use less strong seasonings so as not to overpower zucchini’s taste.
Hinweise zum Ersetzen
  • If zucchini isn’t available for stir-fries or stews, you can use younger or tougher-looking young zucchini (yellow squash) cut similarly, but size and moisture content will affect cooking time. If pieces stay firm, cook a bit longer; if there’s a lot of water, remove the lid to adjust.
  • In broths, older squash or butternut can be alternatives, but their flavor and texture are richer and can become mushy or firmer, so swapping in a like-for-like amount may not be ideal. For dishes aiming for a mellow, soft character like doenjang jjigae, zucchini is closer in feel.
  • In pancakes or jeon, you can combine shredded potato, onion, or scallions to fill zucchini’s gaps, but starch and moisture and aroma differ, so you’ll need to readjust the batter’s consistency and seasoning. There isn’t a universal substitute that preserves zucchini’s delicate texture and green hue exactly.
