Korean: Daegu (대구) tofu soup starts by boiling radish to create a clear, refreshing base, then adds large chunks of cod and soft tofu. Because ingredients and seasonings are simple, the level of radish doneness and controlling heat after adding the fish determine the impression of the broth. When the radish edges become translucent from the outside, sweetness and moisture naturally seep into the broth. At this point, add the cod to cook, and add the tofu after the fish is almost cooked, letting it simmer briefly so that each retains its shape relatively well. Eriocaulon (samchae) should be added at the end, not too strongly aromatic. Boiling for too long can cause the leaves to wilt and the aroma to fade, so just briefly warm it just before turning off the heat. Conversely, if you don’t prefer the aroma of samchae, reduce the amount or omit it while maintaining the clear cod and radish broth’s focus.
Geschmack und Textur
The broth feels clean, with the subtle sweetness from the radish and the mild flavor of cod. It’s best to season with only salt and pepper, keeping the broth from becoming too salty so that a spoonful reveals the ingredients’ distinct flavors. Well-cooked cod flakes softly, tofu breaks smoothly, and the radish remains translucent with a slight chew. Samchae is added at the end for a short, fresh aroma.
Der Schlüssel zu einem leckeren Gericht
- Slice radish into 0.5 cm half-moon shapes and boil in water first; add cod before the radish is fully tender so the fish cooks evenly and the radish finishes cooking properly.
- Cut cod into large chunks after removing bones; steady medium-low simmer is less likely to cause the flesh to fall apart than a vigorous boil.
- After adding cod, rarely stir with a ladle; instead gently shake the pot to submerge the ingredients, and add the next ingredient when the flesh becomes opaque and starts to separate.
- If adding tofu too early, its edges are prone to breaking; add it once the cod is almost cooked and simmer for about 5 minutes to warm through.
- Adjust seasoning by salting just before adding samchae, then add a small amount of pepper; if the pepper aroma is too strong, it may mask the broth’s mildness.
Häufige Fehler
- If the broth becomes cloudy and the cod meat crumbles, you likely boiled too hard or stirred too often after adding the fish; next time, reduce to medium heat and avoid stirring with a ladle.
- If the radish is still firm but the cod is already cooked, you likely didn’t boil the radish long enough; wait until the radish edges turn translucent, then add the cod.
- If tofu pieces break a lot, you added it early or stirred too vigorously; add tofu later and handle gently with a wide spatula or ladle.
- If samchae turns yellow and the aroma weak, the cooking time was too long; boil for about 1 minute or add after turning off heat to finish with residual heat.
- If the broth feels heavy from too much salt, it may be due to not considering the water amount and the flavors from cod and radish; taste and adjust seasoning gradually after boiling.
Anwendungsideen
- If samchae’s aroma feels overpowering, use less than the fixed 50 g and adjust to bring out the broth’s natural lightness.
- To soften the radish further, cook it one more stage before adding cod; be careful not to cook it so long that it breaks apart and clouds the broth.
- If you cut tofu into large chunks, the shape stays steadier in the broth; smaller pieces are easier to eat with cod in a spoonful but can break apart easily.
- If you enjoy more pepper aroma, add a tiny amount to the serving bowls, but too much while cooking can mask the delicate scent of cod and samchae.
Beilagenideen
- When ladling the broth, use a wide spoon to keep cod and tofu intact and arrange radish evenly so the ingredient mix is well presented.
- Place the samchae on top at the end so its fragrance enhances the finish.
- Serve with warm rice; pepper can be added at the table according to taste.
- If cod flesh tends to break up easily, portion into individual bowls first and then pour the broth.
