Soy sauce is a salty liquid seasoning made by fermenting soybeans, adding not only saltiness but also deep umami and color to foods. It is versatile from soups and stews to stir-fries, braises, and sauces. Even among soy sauces, products differ in saltiness, aroma, and color depending on whether they are 진간장, 국간장, or 양조간장. For stir-frrying or braising, soy sauces with more distinct color and flavor tend to pair well, while for clear broths it is easy to choose 국간장 that won’t darken the surface of the dish too much. However, because each product varies in salinity, it’s more stable to start tasting and adjusting in the middle rather than adding a large amount from the start. Soy sauce spreads quickly when it meets moisture in ingredients, so in marinades you should also consider the amount of other liquid ingredients. If the saltiness feels strong, instead of just increasing water or stock, you can add small amounts of sweetness, acidity, and aroma to rebalance the overall flavor.

الطعم والملمس

The dominant taste is saltiness, but there is also the umami from fermentation and a warm aroma, with depending on the product a subtle sweetness or a deep aged aroma. Darker soy sauces tend to color the surface and the broth brown. The texture is a thin liquid that penetrates ingredients easily. Therefore it quickly impart flavor to moisture-rich ingredients like tofu or mushrooms, but if left soaking too long, the overall saltiness can become higher than the surface.

طرق الاستخدام الرئيسية
  • Used to season soups, stews, and broths; in clear broths choose a variety that changes color less to keep the ingredient colors intact.
  • Add to marinades for meats like bulgogi or galbi to build the salty and umami base. When used with sweeteners like sugar, pear/onion, and garlic, the saltiness of soy sauce can be balanced so it doesn’t skew to one side.
  • Add a small amount when stir-frying vegetables, mushrooms, or tofu to impart aroma and color in the pan. If you add too much early with high-moisture vegetables, it can become braise-like rather than stir-fry.
  • Make a braising sauce with soy sauce and water or stock for braised dishes, giving a salty flavor to mild ingredients like radish, potatoes, eggs, or fish.
  • Use as a dipping sauce with dipping mixtures made from soy sauce, vinegar or citrus juice, sesame oil, and minced garlic.
نصائح التحضير
  • Shake the bottle gently before use to reduce flavor variation, and use a measuring spoon to make portioning easier.
  • When replacing 국간장 with 진간장, don’t add the same amount all at once; start with about half and check color and saltiness. 국간장 suits clear broths, 진간장 suits braising and stir-frying for a more natural look.
  • When marinating meat or tofu in soy sauce, consider moisture released from the ingredients and make the marinade slightly thicker. If the marinade becomes too thin after marinating, don’t pour a lot at once; use only as much as needed.
  • In stir-fries, heat the soy sauce by guiding it to the edge of the pan for a short time, then mix with the ingredients to wake the aroma. If the pan is too hot or the sauce contains a lot of sugar, it can burn quickly, so it’s better to lower the heat.
خصائص عند الطهي
  • When heated, the sharp aroma of raw soy sauce mellows and a roasted aroma becomes more pronounced. Short heating preserves aroma, but long simmering reduces the delicacy of the aroma and makes saltiness more prominent.
  • If moisture reduces during braising, the sauce won’t thicken by itself and the salinity will rise. If the broth appears noticeably lower than before, pause adding more sauce, taste the ingredients first, and adjust thickness with water or stock.
  • Dishes that are fried with soy sauce can gain brown aroma on the surface, but if there is a lot of moisture in the pan, boiling occurs before browning. In that case, cook the ingredients in portions or dry the moisture over high heat before adding soy sauce.
  • When mixed with acidic vinegars or citrus juice, the perception of saltiness can soften, making it good for salads or dipping sauces. Conversely, adding too much acidity to braising for a long time can make the sourness predominate over the soy sauce aroma.
تركيبات مناسبة
  • Garlic, ginger, scallions, and onions harmonize with the fermented aroma of soy sauce to balance meat or fish seasonings.
  • Adding sesame oil and sesame seeds provides a savory finish and is particularly good for greens or tofu dishes. In dishes with strong sesame oil aroma, use less soy sauce so other ingredients’ aromas aren’t overwhelmed.
  • Sugars like sugar, corn syrup, and the sweetness from fruits or vegetables help round the saltiness for braises and glazes.
  • Vinegar, lemon juice, and chili powder add acidity and spiciness to soy sauce marinades, aiding balance with oily or bland ingredients.
نقاط يجب مراعاتها عند الاستبدال
  • If you don’t have soy sauce, you can season with salt to basic taste and add small amounts of umami boosters like stock, mushrooms, or miso, but the fermented aroma and browning from soy sauce will not be reproduced.
  • If you must use 국간장 instead of 진간장, start with a small amount and avoid forcing brown color; adjust braising time rather than adding more dark seasonings. This swap may be relatively natural in broth-based dishes, but in deep stir-fries or braises the flavor and color difference can be noticeable.
  • When using 진간장 instead of 국간장, the color may become cloudy, so this is not ideal for clear soups or egg-drop soup where color matters. Add only a small amount and balance the rest with salt.
  • Tamari or other soy sauce substitutes can be options, but the saltiness and aroma vary by product. Start with smaller amounts and adjust gradually by taste.
