Kimchi is a fermented side dish made by salting and seasoning vegetables such as napa cabbage and radish, used in dishes to add sourness, umami, and spiciness all at once. Because the direction of flavor changes greatly with the type and degree of fermentation, for relatively light broths, less-fermented kimchi is often more suitable, while for rich dishes like stir-fries or stews, well-fermented kimchi is a better match. In addition to serving it as is, kimchi can be used in kimchi jjigae (stew), kimchi fried rice, jeon (pancakes), stir-fries, and noodle toppings. The kimchi broth also adds color and acidity, but its salinity can be high, so it’s easier to adjust by tasting first and adding in portions rather than dumping a lot at once. Because kimchi’s seasoning and fermentation aroma are the main characters, delicately scented fish or clear broths can have their flavors overwhelmed if kimchi is used in large amounts. In such cases, reduce the amount of kimchi or use only a small amount of the broth to add a fresh aftertaste.

الطعم والملمس

Kimchi has a salty, sour taste with a sharp flavor from seasonings like chili powder and garlic. When under-fermented, the fresh sweetness and crunch of the vegetables remain, and when fully fermented, the sourness and fermentation aroma become pronounced. Texture varies with the ingredient and degree of aging. Nappa cabbage kimchi has softer leaves and comparatively crisp stems, and if cooked for a long time, the tissue breaks down and imparts depth to broths and sauces.

طرق الاستخدام الرئيسية
  • Well-fermented kimchi is good for making a deep, sour broth in stews with pork, tofu, and stock. If the kimchi is too sour, rather than adding more sugar or sweet onions, lightly sauté it in oil first to soften the sharp sourness.
  • Finely chopped kimchi can be used to make kimchi fried rice by stir-frying with rice. Since kimchi contains a lot of moisture, adding it directly in large amounts can make the rice soggy, so it’s advantageous to first fry the kimchi to reduce moisture, then add day-old rice.
  • Kimchi pancake (jeon) can utilize finely chopped kimchi and kimchi broth to add color and flavor to the batter. If the batter gets too thin and the edges don’t crisp, reduce the amount of broth or water, spread it wide, and cook over medium heat until fully cooked.
  • Ramen, knife-cut noodles, and bibim noodles can be topped or garnished with kimchi to cut the richness. However, if the broth dish is already salty, serve kimchi separately or use only a small amount to avoid oversalting overall.
نصائح التحضير
  • Taste kimchi before chopping to check sourness, saltiness, spice, and water content. If sourness is strong, it’s better suited for stews or stir-fries that use heat and oil; if it’s crisp, it pairs well raw or with brief cooking.
  • For kimchi to be added to broth, cut it into bite-sized pieces. If you plan to simmer for a long time, don’t cut too thin. Small pieces can disintegrate easily and lose texture, so leave a bit larger stem pieces if you want a chewier bite.
  • Strain the kimchi broth or squeeze the solids lightly to adjust the broth’s texture to be less muddy. On the other hand, in pancakes or fried rice, a small amount of seasoned solids can help deepen the flavor.
  • Rinsing salty kimchi in water and squeezing dry can be used, but this also weakens the fermentation aroma and seasoning flavor. This method is better for stir-frried dishes that have more seasonings, where the kimchi’s own flavor is not the sole focus.
خصائص عند الطهي
  • If kimchi is fried in oil first, the seasoning aroma spreads and the moisture reduces, giving a more concentrated taste. If there is a lot of water on the pan bottom, it’s easier to fry over medium-high heat in a wide pan to evaporate moisture rather than lowering the heat.
  • During simmering, the kimchi’s sourness and saltiness spread into the broth. If you add soy sauce or salt heavily from the start, the dish may become salty as it reduces, so season at the end after boiling kimchi with broth.
  • Prolonged heating makes kimchi soft and the seasonings meld into the broth, but the crunch of texture is hard to maintain. For stews where contrast in texture is needed, add some early and some at the end for a brief cook.
  • In kimchi pancakes, the moisture can make the batter thin. If it sticks or tears when turning, spread the batter thinner and wait for one side to become sufficiently crisp before flipping.
تركيبات مناسبة
  • Fattier ingredients like pork or pork belly complement kimchi’s acidity by balancing the flavor. If you don’t use fatty meat, add tofu, mushrooms, or eggs to create a soft texture that tempers the spiciness.
  • Tofu and kimchi are commonly used together in stews, stir-fries, and as a side, with the tofu absorbing the strong kimchi flavor. Since tofu itself is lightly seasoned, adjust additional seasoning later if the kimchi is salty.
  • Sesame oil, vegetable oil, green onions, and onions help round out kimchi’s spicy aroma and acidity. On the other hand, layering too many strong aromatics can dull the kimchi’s characteristic fermentation aroma.
  • Plain carbohydrates like rice, noodles, or potatoes suit kimchi’s saltiness and acidity, making it especially good in fried rice, jeon, and noodle dishes.
نقاط يجب مراعاتها عند الاستبدال
  • There are few single ingredients that can replace all of kimchi’s sourness, spicy seasoning, and fermentation aroma. Depending on what role is needed in the dish, using pickled vegetables, spicy seasonings, and acidity separately can be a practical supplement.
  • If you mainly need the kimchi’s tartness in stews or stir-fries, you can add a small amount of chili powder or gochujang to chopped pickled cabbage or sauerkraut. However, since saltiness and aroma vary by product, adjust gradually rather than replacing with the same amount.
  • For kimchi pancakes, where kimchi is a main ingredient, substituting with other ingredients will significantly change the taste and texture. A spicy vegetable pancake with cabbage or chives plus gochugaru, minced garlic, and some acidity is a natural alternative.
  • For dishes that require less-fermented kimchi, a substitute with strong sourness might not be suitable. In this case, even with pickled vegetables, add vinegar only at the very end in a tiny amount to avoid making it overly sour.
